I love the idea of a smash cake- who doesn’t want to see a cute baby covered in frosting! But we are trying to avoid sugar as much as possible at this age. I wanted to make a healthy smash cake for my city babes first birthday since he had not had any sugar yet. I made a sugar free banana bread with whole wheat flour and a Greek yogurt peanut butter frosting. I also had a regular cake for the adults although everyone like the healthy cake too! Use whatever cake pan you want instead of a bread loaf. I used a 6 inch round pan and put the leftover batter in a mini cake pans. Here is the recipe:
INGREDIENTS
• ⅓ cup melted coconut oil
• ½ cup honey or maple syrup
• 2 eggs
• 1 cup mashed bananas
• 1 teaspoon vanilla extract
• ½ teaspoon salt
• ½ teaspoon cinnamon
• 1 ¾ cups whole wheat flour
• 1 teaspoon baking soda
• ¼ cup hot water
INSTRUCTIONS
1 Preheat oven to 325 degrees F and grease pan.
2 In a large bowl, beat oil and honey together. Add eggs and beat well.
3 Stir in bananas and vanilla, then stir in the salt and cinnamon. Lastly, stir in the flour, just until combined.
4 Add baking soda to hot water, stir to mix, and then mix briefly into batter until it is evenly distributed. Spread batter into the greased pan.
5 Sprinkle with cinnamon and swirl with a toothpick or the tip of a butter knife for a pretty marbled effect.
6 Bake for 55 to 65 minutes.
For the frosting I just mixed a cup of Greek yogurt with 2 tablespoons of peanut butter and beat it with a mixer. Not the prettiest color but yummy!
